Jack’s Block was planted in 1998 on the highest part of the vineyard. The vines are grown using organic principles, are very low yielding and the grapes are picked early to produce wine with great freshness, natural balance and aromatics. The fruit is hand-picked, whole bunch fermented and remains on skins for three weeks to gently ferment. 25% of the fruit goes into new French oak barrels to preserve elegance and finesse. The style is similar to Cote Rotie in Northern Rhone. Jack’s Block Shiraz has been made by Michael Dhillon at Bindi Wines since 2002.
